RVA 807 Dunnottar Castle Ale

Isolated from a the hollowed grounds of Dunnottar Castle in Scotland this is truly a special yeast. “William Wallace, Mary Queen of Scots, the Marquis of Montrose and the future King Charles II, all graced the Castle with their presence. Most famously though, it was at Dunnottar Castle that a small garrison held out against the might of Cromwell’s army for eight months and saved the Scottish Crown Jewels, the ‘Honours of Scotland’, from destruction”

Unlike most of our Native Virginia strains, Dunnottar Castle Ale yeast is ferments fairly clean with very little ester production when fermented in the cooler range. It attenuates well but leaves a malty backbone typical of traditional yeasts of the region. Use for pale ales, bitters and of course, 60, 70, and 80 shilling scotch ales and Wee Heavies. This is a great example of terroir and sheds light on the why different styles evolved in different locations.
