At 55°F this will produce a clean malty beer in the German tradition. Raise the fermentation temp to (65°F) and this yeast produces the beers famous to San Francisco, known as “California Common.” It is unique in tolerating higher temperatures (65°F) while maintaining a delicious flavor profile.
